While Fleroo's recipe is pretty simple and it does work, I have a bit of a variation to it that I use when making it for the gang at Camp Rip-N-Tear. I add a bit of milk to the mess while melting in the cheese. The best cheese to use is getting a bit hard for me to find. The bricks of US Government hand-out cheese makes the absolute best Mac and Cheese, but failing that I use Velveeta.

Try making a white sauce and melting cheddar cheese into the white sauce. Then after your macaroni is cooked put a layer of macaroni in a casserole dish, then a layer of white sauce and some thin slices of velveeta cheese, then macaroni, sauce and velveeta till you get to the top of the casserole. Top with slices of velveeta and stick in the oven until you have lots of color on the top. Dont forget to salt and pepper the sauce. If you really want to get fancy, put pieces of lobster in each layer but not on top.

Was going to suggest pretty much what johns recipe was with the exception of adding lump crab in lieu of lobster. There's a rib place on Assateague Island that has this same recipe and it's out of this world.
