Haven't made this in years but I finally dug out the recipe. I copied this from the old Pennsylvania Sportsman Magazine back in the late 80's or early 90's. It's pretty darn good.
Colorado Venison Chili
1/2 lb. venison or elk burger 1 lb. venison or pork bulk sausage 1 large onion chopped 1 clove garlic diced 32 oz. can tomato sauce 1 tsp. oregano 2 TBSP chili powder 1/2 tsp. thyme 1 bay leaf 32 oz. can red kidney beans drained 1/2 green pepper chopped
Brown burger and sausage in five quart pot and drain. Add onions and garlic and saute with meat. Add tomato sauce, oregano, chili powder, thyme, bay leaf, kidney beans and green pepper. Bring to a boil and simmer covered for 1 hour or longer stirring occasionally.
