I made this up a few years ago and it is perfect and refreshing after a game dinner.
Ingredients: all measurements are approximate since I made up this desert. The measurements here is for one peach which serves two people.
1/2 peach per person. The bigger, the better Goslings Black Seal Rum about 3 or 4 ounces brown sugar, about a quarter cup, more if you like it Butter, about a third of a stick for a 1/4 lb stick Vanillia ice cream
Cut the peaches in half, remove stone and peel. Cut a thin slice off the bottom to remove the roundness to the peach will sit steady in a bowl.
Put the butter in a skillet on medium low heat and when the butter is hot put the peaches in the skillet stone side down and saute in the butter for about 5 minutes, then flip and give 5 minutes on the other side. Then add the brown sugar and stir around to help it disolve. Then add the rum and stir till you get a nice syrup. cook the peaches in the syrup for about 5 minutes spooning the syrup ober them.
Remove the peaches from the pan and place 1/2 peach in small bowls. cook the syrup a minute or two longer to thicked a bit then spoon some over the peaches in the bowls and remove from heat.
Place one dip of vanillia on top of each peach and spoon the syrup over the peaches, use all of it. It is important to use Goslings Black Seal Rum because its flavor is killer. _________________________ Life is short, Eat dessert first!

Well, that explains a lot! Sounds very good. Ice cream and peaches on the grocery list. Rum on the other list!

I'll be darned if that doesn't sound like a winner! Fresh peaches are about gone from the markets. Where was this recipe a couple weeks ago!

My wife and I owed a couple of good friends dinner having been invited to their place a few weeks ago. We invited them tonight and I promised them one of my specialties...chicken marsala (my wife says my marsala is like eating candy). We also had a noodle casserole, peas, green salad and wine. All I needed was a dessert and you guessed it, I fixed this peach dessert tonight.
I was able to buy a half-peck of peaches last weekend from a local orchard and couldn't wait till tonight. I prepared the peaches, sauteed them and made the syrup before our guests just like you'd get in some fancy restaurant. My guests didn't like the dessert...THEY ABSOLUTELY LOVED IT!!! Good heavens is this a great recipe. You've got to try it.
I gave the recipe to them and she said she's sure that apples could be substituted for peaches. All I know is I can't wait for peach season to roll around next year.

I am glad those who tried it liked it. Nectarines are in now and they work as well as peaches for this recipe. I use then 2 days ago.
