Lots of venison recipes, but here is my favorite.. Venison Pepper Steak. Slice venison into strips. Use steak or chops or even loin. Thin strips about 1/4 inch thick and a couple inches long. Brown the strips in a little olive oil. Season with ground Ginger and salt and pepper. Add sliced onions and let the onions carmelize. Lots of onions. Add a can of Rotel diced tomatoes and chillis. Add chopped celery and green peppers. Add sliced mushrooms. Add a good splash of Kikkomans Teriyaki sauce. A cup of nice white wine.. Chardonnay works good. Let simmer until the veggies just get tender, do not cook them into mush.. Serve over white rice with a nice cold beer or two. Don't forget the Italian bread.
