Meats texture similar to chicken but a delicious flavor of its own more comparable to seafood such as those the grouper category.

When I was a teenager and hunted with my grandparents...well....every spring when the snappers were migrating in the field behind their house (another hundred yards or so was "the swamp") we would catch some big snappers. My uncle would butcher 'em and then my grandmother made turtle soup. But....nobody got any turtle soup when she made it. She would can it and on the first day of buck season, she would put the soup in a pot, turn the electric oven on low and we went hunting in the morning. At lunchtime we came back and the house was filled with the aroma of turtle soup!!! That was lunch!! And man....was it good!!

My Dad was really into fishing for snappers. They were one nasty critter to say the least. Never will forget those memorable snapper trips!! Couple BIG Boys(not including Dad ):

My Mom made the best turtle soup!! Pretty sure she used her chicken corn soup recipe as a base. Not sure what spices etc but NO SHERRY etc like many use.....imo that overpowers the true turtle meat flavor.

I have had great turtle soup and horrible turtle soup. I use Emeril Lagasse's recipe. It's like a chowder.

I could probably tolerate turtle soup if the turtle meat doesn't chew like the consistency of rubber.

If unbelievably tender turtle meat is causing a chewing toleration issue.......sounds like those choppers are ready to move up from regular Polygrip to Super Poligrip!! lol No issue here with my born with choppers!! lol

I worked with a guy who was into eating turtles back when I was in college.I scooped one up for him,helped him clean it and he gave me some of the different types of meat.I thought it was aweful but I felt even worse about killing the prehistoric thing.It was an interesting ordeal but not enough of a delicasey to make me ever want to do it again.

Like any meat....you gotta know how to cook it. Boiling it over a propane torch in your dorm isn't on the list of "best cooking methods."
