Gently rinse liver slices under cold water, and place in a medium bowl.
Pour in enough milk to cover. soak up to an hour or two . whatever you have time for because this step is SO important in taking the bitter taste of the liver out.
Prepare sweet onions and slice ---one cut through for rings - 1 large onion per person
Melt 2 tablespoons of butter in a large skillet over medium heat. Separate onion rings, and saute them in butter until they begin to caramelize. This takes a while.
Remove onions, and melt remaining butter in the skillet. Season the flour with salt and pepper, and put it in a shallow dish or on a plate. Drain milk from liver, and coat slices in the flour mixture.
When the butter has melted, turn the heat up to medium-high, and place the coated liver slices in the pan. Cook until nice and brown on the bottom. Turn, and cook on the other side until browned.
Add onions, and reduce heat to medium.

Had beef live and onions at the one local inn last Wednesday night for supper. Wife won’t cook it, hates the smell, so I order it when we go out. Not a lot of people like it. My one bud, who had to leave way to soon, liked it so we would occasionally cook it at camp.

I like liverwurst in small doses,clams and venison dogs.Much of that is garbage or the stuff they scrape off the bottom of their boots at the slaughter house but at least they taste good.Liver is disgusting,period.

Good scrapple does rule, bad scrapple is just mush. The nice thing about scrapple is the topping, or not, that people put on it. I have those at camp that eat it plain, put syrup on it, even had one fellow put peanut butter on it," I like dark , preferable home made, apple butter."

Good home made scrapple, oh hell yes. Liver and onions? Not in my camp, unless the cook wants knee-capped?
My parents loved liver and onions. When they briefly lived at my house, came home from work one night and there it was - that horrendous stench. Opened all the windows, told 'em I'd be back the next day (spent the night at the girl friend's place) and it had better not still smell like death in there, when I came back.

Growing up I ate all that stuff.Waste not want not.Lancaster county farmer traditions,watched granddad do the butchering.He would give me pieces from the boiling kettle.May have acquired some immunities.

I'll have to disagree with this list some, at lease when we did whole hog butchering, but red did come close with everything but the oink. We had no skin, very little fat, and the liver went into wurst in the scrapple we made. From the 22LR between the eyes to the meat hanging in the smoke house, If a home butchering is done right there's very little left over to be thrown out.

Dave is butchering next weekend. He is in charge of making the scrapple. He will bring a couple of pans to camp for deer season, and we will make it disappear. I might also make deer liver and onions, so if yinz don't like that sorta stuff, stay away. Now, if yinzers don't like liver and scrapple, whatcha thinka puddin (panhaas)?
