I truly believe bear meat would be so much better if it were handled differently .....dragging it all over the state with the hide on while we take it to the check stations then transport it home ....wherever that may be ....I think it should be field dressed skinned and cooled as quickly as possible

I guess it's illegal to skin 'em on the spot and then take 'em to the bear check station? Take the skin and the "naked" bear both?

I checked a trail cam today, it has been nothing but a parade of bears past it for the last month. Mom and three cubs and probably 3 other ones.

I have had two deer that were handled the same as I have always handled mine, that tasted terrible. I once read something written by a butcher and he said that in his years of butchering cattle, a few times he ran across one that, for some reason, tasted bad and was only fit for hamburger or pet food. He said they called them "dark cutters". Maybe bear and deer have "dark cutters" in their populations too?
We are very picky about trimming all fat from our venison. We bone everything out except we do sometimes leave the bone in the neck roast. We butcher asap and cool as quickly as as we can. Many of our deer come in archery season and we have never had any spoilage.

I promise one a "Friendly Welcome" !! Back why my Dad killed a 383 pound PA Bear we ate bear for almost a year on a weekly basis(And then some ). My Mom would do mostly roasts with potatoes, onions, carrots celery. Even the steaks were done the same way. It was purdy darn good as I remember......of course you either ate bear or you didn't eat!!

I never figured out what I would do with a bear... When are you coming for dinner? I will learn you what to do with em. lol
